A delicious and sophisticated adult cookie you can serve for special occasions or for those days, when you just want to treat yourself.
Butter Cookies
- 2 c. all purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. unsalted butter – room temperature
- 1 c. sugar
- 1 large egg
- 1/2 tsp. vanilla
- icing sugar
In a bowl whisk together flour, baking powder and salt.
Into the bowl of a food processor place room temperature butter and add sugar, egg and vanilla. Pulse briefly to mix. Add flour mixture and pulse to mix. On a floured surface turn out dough and gently form into a ball that can then be divided into two. This will make the dough easier to work with. Roll each ball into a log approximately 1 inch in diameter. Wrap each in plastic wrap and refrigerate for at least 4 hours.
Preheat oven to 375 degrees
Remove plastic wrap from the dough and place them on a floured surface to be cut into 1/4 inch disks. Place onto baking sheet, an inch apart and then place baking sheet on the upper rack of your oven. Cook for about 10 minutes, but check them periodically and remove just when the bottom edges of the cookies start to become slightly golden. The bottoms can burn easily so be attentive.
Remove cookies from baking sheet immediately and dust with icing sugar.
